Agave the plant cultivated and distilled into tequila, mezcal and other spirits in modern day Mexico for millennia, is now being grown and distilled in California, Australia, South Africa, Peru, Venezuela, India and elsewhere. Just don’t cal the resulting liquid tequila. It takes 7 to 10 years for and agave plant to grow, and prices fluctuate wildly during its lifecycle.
